What Do You Call a Fake Noodle? An Im-pasta!

I love pasta, I could eat it every day of the week, every meal of the day. Marinara, Alfredo, Parmesan cheese, Mozzarella, I can’t help myself. Scooping out mounds of bow-tie noodles drenched in Alfredo sauce, the calories can add up quick. I LOVE this method of “fake pasta” where the noodles are actually thinly sliced strips of zucchini that you cook up with a little bit of water and then coat in your favorite sauces. Bonus: if you want an absolutely veggie-packed dinner, here’s a link to a Cauliflower Alfredo recipe where pureed cauliflower is the base for your Alfredo sauce instead of heavy cream, pour it over your zucchini noodles, top with some grated parmesan  and devour your vegetables!
